Sausage Spiedini

Sausages and fresh apples on a stick. This is a very rustic Italian dish of the Abruzzo area. In fact I had this exact dish in the outskirts of Rome, in Palestrina. My wives cousin's family has a villa there and part of their house is built on an ancient aquaduct, it was pretty amazing. We had these skewers in the campania, and it will never taste as good as the memory.

Smoked Salmon Goat Cheese Rotolini

I had this dish in Pescara,Italy which on the Adriatic side. the great thing about the beaches in Italy is you can spend the whole day there. You rent a chair and umbrella setup and the kids can play on play sets with other kids. Then you take a walk to the restaurants right there on the beach. Let the kids continue to play or let them join you. Of course the restaurants rock! The wine that I felt went best with dish was the one I had there...Trebbiano d'Abruzzo.
The key to this dish coming together is letting the ingredients cool before you roll them out.

Crostini Gorgonzola

This is one of my favorite crostini dishes. The combination of red wine caramelized onion, melted gorgonzola cheese and fresh pear is very warming. This dish screams for a Valpolicella Ripasso.

Pumpkin Panini

My first blog post, very exciting.

So in celebration of Hallows Eve I wanted to create a pumpkin dish that would fit nicely at a wine event and still stay with my Italian theme.

Roasted pumpkin with fresh mozzarella and Parmigiano Reggiano.



The nice thing about this dish is you can get an easy twenty recipes(using the disc method) out of a 5lb pumpkin, plus lots of remaining pumpkin for another recipe.
