Smoked Salmon Goat Cheese Rotolini


I had this dish in Pescara,Italy which on the Adriatic side. the great thing about the beaches in Italy is you can spend the whole day there. You rent a chair and umbrella setup and the kids can play on play sets with other kids. Then you take a walk to the restaurants right there on the beach. Let the kids continue to play or let them join you. Of course the restaurants rock! The wine that I felt went best with dish was the one I had there...Trebbiano d'Abruzzo.
The key to this dish coming together is letting the ingredients cool before you roll them out.
